Sweet and Spicy Chicken

2 cloves garlic, minced
1 medium onion, quartered
2 cups tomatoes, canned, diced
1 inch ginger, peeled and sliced
2 tablespoons green onion, sliced
- Place spices (cumin, cinnamon, garlic, and ginger) in a plastic bag with chiken and toss to coat.
- Heat oil in a heavy pot or slow cooker. Brown chicken, then add remaining ingredients and cook until tender, at least 60 minutes.
- Serve over brown rice and include a cup of chopped leafy greens.
